- (2 packages) Chicken Tenders
- (1 lb) Natural Bacon
- (1/4 c) Raw Honey
- (1 1/2 TBS) Mustard
- (1/2 tsp) Paprika
- (Pinch) Chipotle Pepper (optional)
- Juice from 1/2 lemon
- (pinch) Sea Salt
Preheat cast iron skillet in oven to 350 degrees.
Wrap each chicken tender in a slice of bacon. If your bacon ends up too long, you can easily trim the last bit off, collect the bits, and just lay them across a chicken tender.
Mix together honey, mustard, paprika, chipotle pepper flakes, lemon juice and sea salt. Once skillet is hot, remove from oven, and place the wrapped chicken tenders in the pan. Then brush with the honey mixture. Bake 12 minutes. Remove skillet from oven, flip tenders, and generously brush with remaining honey mix. Cook 12-20 minutes longer, or under bacon is as crispy as you like it. I like mine really crispy, so I bumped up the temp to 380 for the last 5 minutes or so.
Makes 12 delicious bacon wrapped chicken tenders.
